Cinco de Mayo is a traditional Mexican holiday that is celebrated on May 5th. Its name is also the day of the year that it is celebrated. The celebration represents the victory of the battle between the Mexican army and the French at the battle of Puebla in 1862. Hundreds of years have molded the celebration. Today it is celebrated more often by Mexican decedents in the United States, than it is in Mexico. The festivities of Cinco de Mayo include music, folk dancing and exquisite Mexican cuisine.

There are many types of traditional Mexican foods that are served for Cinco de Mayo and even ones only eaten on special occasions.

Guacamole is a traditional Mexican dish that dates back to the Aztecs. Guacamole means, Avocado sauce or mixture. The Aztecs believed that avocados were an aphrodisiac, resulting in the popularity of the dish. Main ingredients include the avocado, onions, chilis, fresh tomatoes and salt. This dish is typically eaten as a dip or spread.

Chilaquiles are corn tortillas cut in quarters and fried. Green or red salsa is poured over the top called Totopos". Eggs and chicken can also be added. Topped with cheese and sour cream. Chilaquiles are usually eaten for breakfast or brunch. They are also known to cure the common hangover. Mexicans believe that spicy foods help to speed the cure of a hangover.

Enchiladas are corn tortillas rolled around a variety of fillings with a chili pepper sauce poured over the top. Originally they were wrapped around fish by Mexicans who lived near lakes and streams. They can be filled with any type of meat, cheese, fish, potatoes, vegetables, or beans.

Mole Poblano is a mixture of chili peppers, ground nuts or seeds, spices, Mexican chocolate, salt, avocados, onion and garlic. Mole Poblando is a dish that is eaten on specials occasions such as Cinco de Mayo and Quinceanas. Because it is only eaten on special occasions and due to the many ingredients, it is also referred to as an offering of the Mexican culture.

When you hear Cinco de Mayo, it is usually associated with Mexican beer and tequila. There are also many authentic Mexican beverages served on this holiday. Other than classic margaritas there is also a refreshing cocktail called Agave Negro. It is a blend of tequila, lime juice and black berries. Add a splash of Chambord for color and a little club soda for the fizz.

Because Cinco de Mayo is a celebration there is sure to be drinking involved. Always remember to have fun, be responsible and don't drink and drive.
