Special but Easy Mothers Day Menus
Mother’s day is a special day to honor mothers. Usually families have a big lunch or dinner to celebrate. Here is a sample menu with recipes for that special day:

Deviled Eggs: 12 eggs, ½ cup mayonnaise, 1 ½ tsp mustard, paprika for dusting.
There are so many different ways to make deviled eggs so this is just a basic recipe. Place 12 eggs in a saucepan, then add water till just above the eggs. Add salt to prevent cracking. Bring water to the boil. Turn off heat and put the lid on. Let eggs sit for 20 minutes. Transfer the eggs to ice water and let sit for about 10 minutes. Now it’s time to make the eggs.
Crack the eggs and slice them in half lengthwise. Place the whites on a plate and the yolks in a bowl. Smash the yolks and add the mayonnaise and mustard. Mix it all up. Stuff some of the yolk mix into each half of the white. Dust with paprika when done.
Ham: Cook ham according to package directions
Succotash: 1 can (2 cups ) corn, 1 can (2 cups) baby lima beans, ¼ cup chopped onion, ¼ cup chopped red pepper, 1Tbsp butter, 1/8 Tsp. salt, 1/8 Tsp. pepper
In a saucepan heat butter and cook onion and pepper for about 5 minutes. Add corn, lima beans, salt and pepper. Once heated, drain, then it is ready to eat.
Hawaiian dinner rolls: Heat rolls according to package
Twice baked sweet potato: Small sweet potato for each person, cinnamon, nutmeg, salt, brown sugar, butter.
Bake sweet potatoes in a 400 degree oven for 50-60 min. When insides are soft scoop them out into a bowl. For each potato add 1 Tsp. butter, 1 Tbsp. brown sugar, dash of cinnamon, dash of nutmeg, and a dash of salt. Mix it all together and fill up the potatoes. Add miniature marshmallows to cover the top of each potato and bake for another 10 minutes or until marshmallows are browned.
Eight-minute cheese cake: 8oz. pkg. cream cheese softened, 1/3 cup sugar, 1 cup sour cream, 2 Tsp. vanilla, 1 8oz. container cool whip and 1 Keebler ready crust graham cracker pie crust. Strawberries to granish if desired.
Beat cream cheese until smooth; gradually beat in sugar. Blend in sour cream and vanilla. Fold in cool whip, blending well. Spoon into crust. Chill until set, at least 4 hours. Garnish with fresh strawberries if desired.
