What could be a nicer surprise for lunch than mini chicken (turkey or beef can be substituted) pot pies? They are easy to make and bake up nice in a regular muffin pan. These are the perfect size for brunch, lunch or just a nice snack. You can even serve them with a small salad and mom's favorite dressing to create a meal.
